With a strong brewing tradition in the Northern and Eastern regions, France is the 5th european brewer country. 300 different beers can be found on the french territory.
However, beer is not really part of consumption patterns. Indeed an inhabitant drinks 33.7l per year (that is 2 33cl bottles per week).

The most spreaded beer, recognizable thanks to its gilded color, color of the moonlight or color of freshly cut stubbles.
The range extends from bitter beers with a low alcohol content to sweeter beers with a much more important alcohol content.
Fermented at a temperature between 39°F and 54°F, bottom fermented beers are usually less fruity and have a lower alcohol content than top fermented ones. Moreover, they often contain more carbon dioxide and should be drunk at a lower temperature.
This type of fermentation spread during the 19th century. It became famous because of a beer brewed in the city of Pilsen in Czech Republic. Since this time, the name of the city has been transmitted to bottom fermented beers that are usually called "Pils".
After main fermentation, these beers are bottled and ready to be drunk. This way, absence of refermentation allows a shorter brewing process.

Invented by Louis Pasteur in 1856, pasteurization consists in heating the beer to a high temperature (158°F approximately). Often beer is pasteurized after being bottled, in such a case bottles are heated to pasteurization temperature during several minutes.
By destroying yeasts and micro-organisms in the beer, this process ensures the stability and conservation of the beer.
Beer with a light foam. These beers should be served in a glass quite tall in order to obtain a beautiful collar, and with a head thiner than the body to help the foam to form.
Tip: serve a first part of the beer and begin to enjoy. Then serve the rest of the beer to obtain some foam again.
As the foam is light, thirsty people can drink this beer from the bottle :-)
