Top fermentation

Top fermentation

Fermented at a temperature between 59°F and 79°F, top fermented beers are famous because of their more complex flavours. Moreover, they often have a higher alcohol content (depending on the malt quantity) than bottom fermented ones.
This fermentation type was originally the most spread one, but since this time bottom fermented beers have flooded the market. Mainly brewed by artisanal breweries, top fermented beers are the ones prefered by beer lovers.

Pasteurized

Pasteurized

Invented by Louis Pasteur in 1856, pasteurization consists in heating the beer to a high temperature (158°F approximately). Often beer is pasteurized after being bottled, in such a case bottles are heated to pasteurization temperature during several minutes.
By destroying yeasts and micro-organisms in the beer, this process ensures the stability and conservation of the beer.

"Light" foam

"Light" foam

Beer with a light foam. These beers should be served in a glass quite tall in order to obtain a beautiful collar, and with a head thiner than the body to help the foam to form.
Tip: serve a first part of the beer and begin to enjoy. Then serve the rest of the beer to obtain some foam again.
As the foam is light, thirsty people can drink this beer from the bottle :-)
