Bottom fermentation

Bottom fermentation

Fermented at a temperature between 39°F and 54°F, bottom fermented beers are usually less fruity and have a lower alcohol content than top fermented ones. Moreover, they often contain more carbon dioxide and should be drunk at a lower temperature.
This type of fermentation spread during the 19th century. It became famous because of a beer brewed in the city of Pilsen in Czech Republic. Since this time, the name of the city has been transmitted to bottom fermented beers that are usually called "Pils".

Invented by Louis Pasteur in 1856, pasteurization consists in heating the beer to a high temperature (158°F approximately). Often beer is pasteurized after being bottled, in such a case bottles are heated to pasteurization temperature during several minutes.
By destroying yeasts and micro-organisms in the beer, this process ensures the stability and conservation of the beer.

"Very light" foam

"Very light" foam

Beer with very few foam. These beers should be served in a tall glass in order to have more foam, and thin to keep it. To obtain more foam, you can lift up the bottle while pouring.
Tip: serve a first part of the beer and begin to enjoy. Then serve the rest of the beer to obtain some foam again.
As the foam is very light, thirsty people can drink this beer from the bottle :-)

  • "Samichlaus" beer is brewed once a year on December 6th. It is stored and matured for 10 months before bottling.
  • "Samichlaus" beer can mature for many years in the bottle. Older vintages obtain a complexity and receive their creamy warm aftertaste.
  • "Samichlaus" means "Santa Claus" in the Swiss-German dialect of Zurich.
